Method
- Step 1. In a large cast iron skillet or sauté pan with a lid, heat oil over medium high heat.
- Step 2. Add the onion and sauté for 2-3 minutes, until softened.
- Step 3. Add the peppers and garlic, and sauté for an additional 3-5 minutes.
- Step 4. Add the tomatoes, cumin, paprika, salt, and chili powder.
- Step 5. Mix well and bring the mixture to a simmer.
- Step 6. Reduce the heat to medium low and continue to simmer, uncovered, 10-15 minutes until the mixture has thickened to your desired consistency.
- Step 7. (Taste the sauce at this point and adjust for salt and spice, as desired.) Using the back of a spoon, make four craters in the mixture, large enough to hold an egg.
- Step 8. Crack one egg into each of the craters.
- Step 9. Cover the skillet and simmer for 5-7 minutes, until the eggs have set.
- Step 10. Serve immediately with crusty bread or pita.
Cook's notes
One pan, fewer dishes. Use the widest, heaviest soup pot you own with a tight-fitting lid. The wider base means faster browning at the start; the lid traps the gentle steam that finishes the dish without scorching the bottom.
Salt as you go. Season the aromatics, season the protein, season the liquid before it reduces. By the time you taste at the end, the only adjustment is usually acid — a squeeze of lemon, a splash of vinegar, a final crack of pepper.
Make it ahead. Like most one-pot dinners with tunisian roots, the leftovers are arguably better the next day. Cool quickly, refrigerate within two hours, and reheat gently with a splash of water or stock to loosen things back up.
