Why this dinner works

Corba sits comfortably in the middle. It draws on Turkish traditions where building flavor in stages — aromatics, then spice, then the slow swell of liquid into starch — is just how dinner gets made on a regular Tuesday.
The whole thing comes together in about 68 minutes in a single soup pot, which means dinner from idea to table is shorter than most podcast episodes. We've leaned on the everyday 13 ingredients listed below, but in the notes after the recipe you'll find the small swaps and shortcuts that make this dish forgiving when your fridge is half-empty.
Method
- Step 1. Pick through your lentils for any foreign debris, rinse them 2 or 3 times, drain, and set aside.
- Step 2. Fair warning, this will probably turn your lentils into a solid block that you’ll have to break up later
- Step 3. In a large pot over medium-high heat, sauté the olive oil and the onion with a pinch of salt for about 3 minutes, then add the carrots and cook for another 3 minutes.
- Step 4. Add the tomato paste and stir it around for around 1 minute. Now add the cumin, paprika, mint, thyme, black pepper, and red pepper as quickly as you can and stir for 10 seconds to bloom the spices. Congratulate yourself on how amazing your house now smells.
- Step 5. Immediately add the lentils, water, broth, and salt. Bring the soup to a (gentle) boil.
- Step 6. After it has come to a boil, reduce heat to medium-low, cover the pot halfway, and cook for 15-20 minutes or until the lentils have fallen apart and the carrots are completely cooked.
- Step 7. After the soup has cooked and the lentils are tender, blend the soup either in a blender or simply use a hand blender to reach the consistency you desire. Taste for seasoning and add more salt if necessary.
- Step 8. Serve with crushed-up crackers, torn up bread, or something else to add some extra thickness.
- Step 9. You could also use a traditional thickener (like cornstarch or flour), but I prefer to add crackers for some texture and saltiness.
- Step 10. Makes great leftovers, stays good in the fridge for about a week.
Cook's notes
One pan, fewer dishes. Use the widest, heaviest soup pot you own with a tight-fitting lid. The wider base means faster browning at the start; the lid traps the gentle steam that finishes the dish without scorching the bottom.
Salt as you go. Season the aromatics, season the protein, season the liquid before it reduces. By the time you taste at the end, the only adjustment is usually acid — a squeeze of lemon, a splash of vinegar, a final crack of pepper.
Make it ahead. Like most one-pot dinners with turkish roots, the leftovers are arguably better the next day. Cool quickly, refrigerate within two hours, and reheat gently with a splash of water or stock to loosen things back up.
Pairings & serving
This one feels best in a 6-bowl spread with a sharp green salad and something cold to drink. If you want to stretch it for unexpected company, double the liquid and a single starchy ingredient — rice, pasta, potatoes, depending on the recipe — and the whole pan grows without much extra work.
