Date squares sits comfortably in the middle. It draws on Canadian traditions where building flavor in stages — aromatics, then spice, then the slow swell of liquid into starch — is just how dinner gets made on a regular Tuesday.

The whole thing comes together in about 44 minutes in a single soup pot, which means dinner from idea to table is shorter than most podcast episodes. Method

  1. Step 1. Preheat oven to 350°F (180°C). Grease an 8-inch (20 cm) square baking pan.
  2. Step 2. To make the date filing: Combine the dates and water in a medium saucepan over high heat and bring to a boil. Reduce heat to low and simmer gently, stirring occasionally until the mixture thickens, around 6 to 8 minutes. Remove from heat, stir in vanilla and let cool. Set aside.
  3. Step 3. Combine rolled oats, flour, sugar, baking soda and salt in a food processor. Pulse 3 times (careful not to overmix, you don’t want the mixture to be powdery, just combined). Add butter and pulse again until the mixture is crumbly in pea-sized clumps. Transfer to a mixing bowl to thoroughly mix in the butter.
  4. Step 4. Spread half of the oat mixture on the bottom of the prepared baking pan, pressing down to make a flat, equal bottom later. Add the date mixture over the crust and then spread evenly. Layer with the remaining oat mixture and press down to flatten the top layer.
  5. Step 5. Bake in the centre of the oven until the top is golden brown, 30 to 35 minutes. Let cool completely in the pan before cutting and serving. Date Squares keep well, covered in the refrigerator for up to a week, and frozen for 2 to 3 months.

Cook's notes

One pan, fewer dishes. Use the widest, heaviest soup pot you own with a tight-fitting lid. The wider base means faster browning at the start; the lid traps the gentle steam that finishes the dish without scorching the bottom.

Salt as you go. Season the aromatics, season the protein, season the liquid before it reduces. By the time you taste at the end, the only adjustment is usually acid — a squeeze of lemon, a splash of vinegar, a final crack of pepper.

Make it ahead. Like most one-pot dinners with canadian roots, the leftovers are arguably better the next day. Cool quickly, refrigerate within two hours, and reheat gently with a splash of water or stock to loosen things back up.

Pairings & serving

This one feels best in a 4-bowl spread with a sharp green salad and something cold to drink. If you want to stretch it for unexpected company, double the liquid and a single starchy ingredient — rice, pasta, potatoes, depending on the recipe — and the whole pan grows without much extra work.
